Mango Black Bean Salsa for Summer

Want a wonderful healthy salsa that can be eaten with chips and even as a side dish... Look no further than this recipe for Mango Black Bean Salsa. By using as much fresh produce as you can find this is not only healthy but very tasty too.
Mango Black Bean Salsa for Summer
1 can of organic corn (strained, soaked in water and drained)
1 can of black bean organic (strained, soaked in water and drained)
8 roma tomatoes (well diced)
3 jalapenos (well diced... If you like heat leave the membrane and seeds in)
1 large onion (well diced)
2 mangoes (well diced)
1 lime juiced
1 lemon juiced
salt to taste

Before starting strain 1 can of corn into a strainer and run water over until it runs clear. Place this corn into a large bowl. Now do the same thing with the can of black beans. Place the beans into the bowl with the corn and cover with cold water. Let this stand while you prepare the rest of your salsa.
(Why you ask this step? By allowing canned produce to sit in water for at least 5 minutes you will remove the salt content and also the "tin" taste.)

I have discovered the power of my Ninja so that is what I used to create this summertime salsa. You can do it by hand if you want.

I placed half the tomatoes, onion and jalapenos in the Nimja and pulsed 5 times. Remove to a large bowl. Add the remainder of the tomatoes, mangoes, lime and lemon and pulse. (I add the entire lemon and lime but you can just juice it into the bowl if you want.)
Place this mixture into the bowl with the other half and stir.

Now take your large bowl of corn and black beans and drain it from the water. Add the corn and beans to the fresh produce you just cut up and mix well. Add salt to taste.

This salsa is good with fresh chips ( I love it with shweet potato chips or beet chips...hubby eats it with corn tortilla chips. My husband puts this salsa on his Pizza for a little bit of healthy LOL.)
I love to eat this as a side dish...who am I kidding I eat this as a stand alone dinner many time. Grab a good green juice and my Mango Black Bean Salsa and I am set for the night.

New Summer Juice and Smoothie Recipe

It is hot as the dickens outside! Instead of grabbing a soda or beer, juice or blend up some fresh veggies and fruits for amazing Summer drinks. The Following Recipe can be drank cold or better yet freeze some of the juice into popsicles or ice cubes. Take the ice cubes pop them into a blender and pulse a few times. Amazing Sorbet.

Heart and Liver Booster Juice Recipe

It's been 14 months since I started my journey with juice. While I have come a very long way, I still have a longer way to go. You can read more about my journey at Living The Shweet Life
Today I wanted to share with you my newest juice.  One I created to help boost my heart and liver health.
Couple of hints: When you juice the beet peel it. That will help to cut down the earthy taste many folks say beets have. If you taste your juice and it still has that earthy taste add more lemon.

If you are juicing organic carrots just wash well, no need to peel.

If you are not giving the juice to anyone under the age of 12 there is no need to core your apples. Your juicer will remove the seeds for you. Clean the skin of all produce well. Apple peel has a large amount of it vitamins and nutrients so juice it if at all possible.


What each Produce can do for you.
Red Grapes-antioxidant, anticancer, potassium and protect the heart
Orange and Lemon-antioxidant, anticancer, high vitamin C, help improve mental clarity
Celery-diuretic, anticancer,helps to lower blood pressure
Beets-antibacterial,antioxidant,tonic, liver,gallbladder and kidney cleanser, and strengthens liver and gallbladder
Apples-digestive health, diuretic, detoxifying, laxative, lowers blood cholesterol, liver stimulant. The peels are known to treat, gout, rheumatism and urinary tract issues. Apples help remove toxins from your body. They are high in Vitamins A, B, C
***NOTE:  I always want to remind folks when they are eating or juicing beets that the color it goes in is the color it comes out. Don't be scared when you hit the Loo.***

Popeye's Blueberry Juice

I love to create Juice Recipes much like I used to love to create food recipes. So this weekend I went into the kitchen and played around with my food. This is one of my newest recipes I came up with. This might not look like it tastes good but it is amazing.


I call it my Popeye Blueberry Juice.
12 oz of Spinach
6 oz of Beet Tops (if you have them)
12 oz of Strawberries hulls included
6 Granny Smith Apples
12 oz of frozen Blueberries (thawed) or fresh
2 Large Oranges

Wrap the greens with the strawberries and apples as you juice them to get the most juice. Follow with the blueberries and the rest of your apples and the oranges.
Pure energy and very yummy.

Quinoa Chili with Beans from Juice Pulp

It's Cold.... You want something nice, warm and healthy to feed the non- juicing folks in your home.
 This is the perfect dish and so easy too.
First thing you will want to do is make up Sandi's Spicy Cocktail Juice and save the pulp. 
Grab a food processor and  crock pot
1 can of black beans (rinsed and soaked in water for 5 minutes then rinsed again)
1/2 Onion
4 cloves of Garlic
Bell Pepper
1 Large Jalapeno
Cumin
Paprika
Black Pepper

Super EASY and if you are on a Juice Feast (or cleanse as some folks call it) this make a perfect dinner and it helps to keep you out of the kitchen and away from temptation.

Add your pulp into the food processor along with some of your fresh juice. Process until a thick mixture. Then add the other items and small amount of  fresh water and process to til chopped. 
Place this mixture into a crock pot and cover. Turn on low and leave it. 
If you will be home 2 hours before serving the Quinoa can be added to the crock pot the last 2 hours with vegetable stock. If you will not be home until closer to dinner time cook the Quinoa in a ricer and add it to the chili mixture.
1/4 Cup Quiona to 1 Cup Vegetable Stock.
(either in the chili 2 hours before serving in crock pot or 30 minutes before serving on stove and add to chili)

Sandi's Spicy Cocktail Juice Recipe

Today is Day 2 of Juicy January. I made up a new recipe today and used the pulp to for Marty's dinner ( recipe to follow).
Sandi's Spicy Cocktail
Can be served cold over ice or warmed to 110 degrees.
Handful of Cilantro
1/4 yellow Onion
1 clove Garlic
2 Pounds of Roma Tomatoes
6 Large carrots
1 Lime
6 ribs of Celery
1 Small Jalenapo
1/2 Parsnip
1 Large Cucumber
Juice all the produce together in order listed. I roll the cilantro with the onion and garlic inside. 
You can add more produce to adjust for your taste.
Make sure to save the pulp for the non juicers in your home or freeze some for after your juice feast.

My New Fall Juice

I was at the store today and saw my favorite thing to cook with .... cranberries! So of course I had to grab a bag and head home to the juicer! I took out my favorite produce and whipped up a new Fall juice and wanted to share it with you all. Fresh, Fall and very easy to make. YES it's from Sandi, so it does have a a few produce items in it but it is so worth every one of them.
2 Large Beets Peeled and cubed
4 oranges(peeled)
2 lemons (peeled)
3 limes (peeled)
4 Granny Smith Apples 
1 cup Cherries (pitted)
2 cups fresh Cranberries
2 pounds Carrots
Serve over ICE

Hint: Fill your shoot with your cherries and cranberries and put your plunger in. Then turn on your juicer. Your berries will now juice and will not shoot out all over the place. Once they juice you can turn off the juicer and till the shoot again until you have juiced all your small items. Follow all your small items with any produce that is soft like pears, peaches or apples. Then follow with carrots so that the carrots will wash out all the residue left behind. Make sure to check your pulp container though out  your juicing time. 
Another Hint: I place a plastic bag from the grocery store in my pulp container before I juice so that I have less to clean up. I check it mid way through and press down on the pulp so that I have more room for pulp. Continue on juicing. 
I like to save this pulp to use in muffins but that is for another recipe. LOL
